Monitor Resolution

I have two Dell SE3223Q monitors hooked up to a Dell Dock - WD19S using DP cables. The dock is then hooked to my Latitude 5430 laptop using it's USB-c cable. I've had this set up for months with both monitors set at the highest resolution of 3840 x 2160. Today I locked my computer and when I came back and unlocked it one of my monitors resolution had dropped to 1920 x 1200 while the other stayed at 3840 x 2160. I went to change it back but the highest option was 1920 x 1200. I've tried windows updates, command updates, graphics driver update and a driver rollback. I have no idea why out of the blue, I can no longer set my monitor to its previous high resolution. I've looked at multiple forums and tried their "solutions" with no luck. Any help here is greatly appreciated.
