RAID 5 needs a minimum of 3 disks. Considering a 3 disk RAID 5 configuration .....

RAID 5 stripes data across 2 disks in the RAID set and writes parity on the third disk. Parity is distributed across the 3 disks.

Full stripes are built into the write cache (write coalescing) and a parity is calculated for an entire stripe, provided there is enough sequential data in the cache to fill a stripe. Both data (stripe) and parity are written to the disks in a single operation (no write penalty).
