It would be helpful to know where you got stuck.
Why 2003?! Any training will be obsolete and a waste of your time.
Which RAID/storage controller do you have?
How many drives? Size? RAID level?
You will need RAID drivers injected into 2003 in order to see the drives. Use nLiteOS.com for this.

Download hard drive version of driver.
www.dell.com/.../DriversDetails
Run self extracting file and extract files to a usb key. Insert USB key on R310 Server. Start install , when it says at the bottom of the install press F6 to load drivers, press F6. Browse to files on USB key, finish install.

Use the link admin gave you for the S100 driver, but you probably won't get the drivers to load from USB ... I would suggest you use nLiteOS.com to integrate the drivers into new installation media.
You can install the evaluation version of Server 2012 R2 for 180 days. What you learn will be much more useful and installing will be easier.
https://www.microsoft.com/en-us/evalcenter/evaluate-windows-server-2012-r2
If you have two drives in a RAID 0, reconsider. I understand you are learning, but learn this early: never use RAID 0.
2003 is probably too old to be supported by USC/LCC/SMTD. You'll have to install from scratch.
Yes, you must first run the driver file to extract the contents before you can use them, but like I said, create a new CD with the drivers integrated using nLiteOS.com.
